He leads a three-person crew including Chef Caro Uy, who has curated SKYLARK's menus since launch, blending French technique with global and Mediterranean influences using local Greek produce. Deckhand Jonty Marais completes the team, managing water sports and daily operations with hospitality-trained professionalism.
